Tropical ball with pork filling (Sa-kou Sai Mou) สาคูไส้หมู


This favorite Thai snack menu of childhood. Many Thai people go to the market with their mothers when the children. We will find a snack called "Sago Sai Mou". Steamed snack until tender, stuffed with fried pork with peanut. When chewing feels soft and sticky, it has a sweet and salty filling.  Many children like the taste. Ingredient
  • 250 grams Small sago
  • 150 grams minced pork or chicken or beef (Whatever you like)
  • 2 coriander root
  • 3 cloves of garlic
  • 0.5 teaspoon pepper
  • 2-3 shallots, chopped
  • 100 grams palm sugar
  • 1 teaspoon soy sauce
  • 100 grams Roasted peanuts cracked
  • 100 grams Dry salted radish
  • Golden fried garlic For garnishing
Side serving
Fresh chili / Lettuce / Coriander 

Method of Filling
1.Bring coriander root, garlic and pepper. Pounded thoroughly. 
2.Then turn on the stove medium heat and add vegetable oil. 
3.Add coriander root, garlic and pepper pounded stir fry until fragrance. 
4.Add minced pork and shallots continue stir-fried until cooked, 
5.Add palm sugar, white soy sauce, grounded roasted peanuts, dry salted radish, stir to combine. And taste as you like. Then rest until cool. 
6. Then shape into a ball about 2 cm in size. Set a side.

Let's see how to make sago for wrapping the filling.
1.Bring the sago wash in the water for 2-3 minutes and pour the water out.
2.Then add hot water to the sago. (Medium heat) Knead the sago with hot water.
3.Then shape into a ball about 1 inch in size.
4.Then press it flat to put the filling in the middle. Put the molded filling in the middle. Then wrap it back to make it round as before. Keep doing it all.

How to ripen
  • Bring Banana leave and brush with a thin layer of vegetable oil on the banana leaves. or if difficult to find banana leave you can use thin white cloth or silicone sheet as well
  • Then put in a container for steaming on the stove, add water and let it boil.
  • Then take the molded sago to place them on the oiled banana leaves. 
  • Then close the lid of the steamer for 10 minutes. 
  • When the sago is cooked, turn off the stove and do not let the sago to cool in the steamer. Give a scoop of hot sago into the oiled tray.
  • Put the sago in a beautiful dish, topped with fragrant fried garlic, fresh vegetables, fresh chili.

Tips:
  • Bring hot sago into the oiled tray.This will make the sago to remain soft for a long time.
  • Nowadays, making sago for trading Molded sago can be boiled in lightly boiling water, but make sure the sago is well rounded. Water can't get inside. This method is fast and can be done in large quantities.
  • At present, there are 2 sizes of sago granules, small and large. We prefer to use small and multi-colored, white, green, pink or mixed colors. You can choose as you like.
